There are two kinds of oils,Volatile oils (or Essential oils) and Fixed oils, both have medical and nutritional effects, being useful or harmful.

The use of essential oils has the special name, Aromatherapy(aroma, meaning scent) because they were the first oils discovered to have special effects on health, through inhalation, inhalation saving them from distruction by digestion, providing amazing results.
As for fixed oils. Their medical effects were discovered late because they were damaged in digestants when eaten and cannot be inhaled due to their tolerance to high temperatures (above 200 degrees), causing them to break down and destruct before evaporation.
